Banana Bread Recipe for the Holidays

2-3 very ripe bananas, peeled


1/3 cup melted butter


¾ cup sugar (can be augmented to ½ cup or

1 cup, depending on your preference for sweetness)


1 egg, beaten


1 teaspoon vanilla extract


1 teaspoon baking soda


Pinch of salt


1 ½ cups all-purpose flour






Preheat oven to 350°F and grease a 4x8-inch loaf pan.


In a mixing bowl, mash ripe bananas with a fork until completely smooth. Stir melted butter into mashed bananas.


Mix in baking soda and salt. Stir in sugar, beaten egg and vanilla extract. Mix in flour.


Pour batter into greased loaf pan. Bake for 50-60 minutes, or until toothpick inserted into center comes out clean.


Remove from oven and cool completely on rack. Remove banana bread from loaf pan. Slice and serve.





Prep time: 10 minutes  Bake time: 55 minutes
